Butter Cookie Recipes - French Shortbread Recipe

Ingredients

  • 1 cup/150 g all purpose/plain flour

  • 2 tbsp cornstarch/corn flour

  • 1/8 tsp salt

  • 1 tsp lavender flowers (heads only), rinsed and dried

  • 1/2 cup/125 g butter, softened

  • 1/4 cup/50 g granulated sugar

  • 1/2 tsp vanilla extract/essence


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Set out a 9-inch (23-cm) spring form pan.

  2. Sift the flour, cornstarch, and salt into a medium bowl. Stir in the lavender.

  3. Beat the butter, sugar, and vanilla in a large bowl with an electric mixer at high speed until creamy. Mix in the dry ingredients.

  4. Firmly  press the dough into the pan to form a smooth, even layer. Use a sharp knife to score the shortbread into 16 wedges.

  5. Bake for 25-30 minutes, or until lightly browned. Use a sharp knife to cut the shortbread into wedges along the scored lines.

  6. Loosen and remove the pan sides and bottom. Transfer to racks to cool.
