Butter Cookie Recipes - Coconut Thins Recipe
Ingredients

2/3 cup/100 g
all-purpose/plain
flour
-
1/8 tsp salt
-
1/2 cup/125 g butter,
softened
-
1/4 cup/50
g
granulated
sugar
-
1/2 tsp
vanilla extract/essence
-
2 tbsp
shredded/desiccated
coconut
-
8 candled
cherries, cut in half
Method:

Preheat the oven
to 375°F/190°C/gas 5. Set out a cookie sheet.

Sift the flour and salt into a medium bowl. Beat
the butter, sugar, and vanilla in a large bowl with
an electric mixer at high speed until creamy.

Mix
in the dry ingredients and coconut to form a smooth
dough.

Form the dough into balls the size of
walnuts and place 2 inches (5 cm) apart on the
cookie sheet.

Press a half-cherry into each
cookie. Bake for 12-15 minutes, or until just
golden at the edges. Transfer to racks to cool.
