Butter Cookie Recipes - Coconut Thins Recipe

Ingredients

  • 2/3 cup/100 g all-purpose/plain flour

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/4 cup/50 g granulated sugar

  • 1/2 tsp vanilla extract/essence

  • 2 tbsp shredded/desiccated coconut

  • 8 candled cherries, cut in half


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Set out a cookie sheet.

  2. Sift the flour and salt into a medium bowl. Beat the butter, sugar, and vanilla in a large bowl with an electric mixer at high speed until creamy.

  3. Mix in the dry ingredients and coconut to form a smooth dough.

  4. Form the dough into balls the size of walnuts and place 2 inches (5 cm) apart on the cookie sheet.

  5. Press a half-cherry into each cookie. Bake for 12-15 minutes, or until just golden at the edges. Transfer to racks to cool.
