Butter Cookie Recipes - Chocolate Chip Butter Wedges Recipe

Ingredients

  • 1 3/4 cups/275 g all-purpose/plain flour

  • 1/2 cup/75 g confectioners'/icing sugar

  • 2 tbsp cornstarch/corn flour

  • 1/4 tsp salt

  • 1 cup/250 g butter, cut up

  • 2 cups/260 g semisweet/dark chocolate chips


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter two 9-inch (23-cm) spring form pans.

  2. Sift the flour, confectioners' sugar, cornstarch, and salt into a large bowl.

  3. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Stir in the chocolate chips.

  4. Firmly press the mixture evenly into the prepared pans to form smooth, even layers.

  5. Bake for 15-20 minutes, or until just golden. Cool for 5 minutes in the pan.

  6. Loosen and remove the spring form sides. Let cool completely. Cut each round into sixteen wedges.
