Butter Cookie Recipes - Brown Sugar Drops Recipe

Ingredients

  • 1 1/4 cups/180 g all purpose/plain flour

  • 1/2 tsp baking soda

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 3 tbsp firmly packed light brown sugar

  • 3 tbsp granulated sugar

  • 1 large egg, lightly beaten

  • 1/2 tsp vanilla extract/essence


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter three cookie sheets. Sift the flour, baking soda, and salt into a medium bowl.

  2. Beat the butter and brown and granulated sugars in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg and vanilla extract, beating until just blended. Mix in the dry ingredients.

  4. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 7-10 minutes, or until golden. Transfer to racks to cool.
