Ingredients

1/2 cup/120 ml
packed brown Sugar

1 cup/240 ml sugar
-
2 cup/480 ml
quick-cooking oats
-
1 cup plus 2 tbsp/240 ml
+ 30 ml flour
-
1 tsp/5 ml
baking powder
-
1/2 tsp/2 ml
baking soda
-
1/4 tsp salt
-
2 eggs
-
1/2 cup/120 ml crunchy or creamy peanut butter
-
3/4 cup (1 1/2
sticks) butter, softened

1 1/2 cups/360 ml chocolate chips,
optional
(Makes about 4 to 4 1/2 dozen)
Method:

Instructions for jar: Place brown sugar in a 1
liter jar and press down evenly.

Pour sugar
over brown sugar and smooth over. Place oats
over sugar.

In small
bowl, combine flour, baking power, baking soda,
salt. Pour half of mixture on oats and press
down firmly. Add remaining flour mixture a
liter at a time, pressing down after each
addition. (It will be a tight squeeze.)

Place lid on
jar.

For baking:
Preheat oven to 375 (190C). Empty contents of
jar into large bowl.

Add eggs, peanut butter, and butter or margarine,
softened. Also, if desired, stir in chocolate chips.

Beat on low speed to blend. Drop by heaping
teaspoonfuls onto un-greased cookie sheet Bake for 10
to 12 minutes or until edges are lightly browned.

Remove from oven and let cookies cool on cookie sheet
for 1 minute before transferring to cooling rack.
