Cookies Recipes - Tangy Lemonade Cookies Recipe

Ingredients              

  • 1 cup sugar

  • 1/4 cup chopped pecans

  • 3 cups flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 cup (2 sticks) butter, softened

  • 2 eggs, beaten

  • 1 (6 ounce) can frozen lemonade,

  • concentrate, thawed, divided

  • 1/2 cup sugar


Method:

  1. Instructions for jar: Spoon sugar into 1 liter jar. Sprinkle pecans over sugar.

  2. Mix flour with baking soda and salt and spoon over sugar.

  3. For baking: Preheat oven to 350° (176°C). Empty contents of jar into large bowl and stir to mix.

  4. Add eggs and 1/2 cup (120 ml) lemonade concentrate to dry ingredients. Stir well.

  5. Drop dough by teaspoonfuls onto un greased baking sheet and bake for 8 minutes or until cookies are light brown around edges.

  6. Remove from oven, brush hot cookies lightly with remaining lemonade concentrate and sprinkle with sugar. Move to cooling rack.
