Cookies Recipes - Buttermilk-Raisin Cookies

Ingredients

1 cup/240 ml
packed light brown Sugar

2 cup/480 ml sugar

1/2 tsp/2 ml
baking powder

1/2 tsp/2 ml
baking soda

1/4 tsp/1 ml salt
-
1 tbsp/15 ml
dried, ground lemon peel

1 cup/240 ml
raisins
-
1/2 cup/120
ml coarsely chopped walnuts

1/2
cup (1 stick) butter, softened
-
1 egg
-
3/4 cup/180 ml buttermilk
(Makes about 3 to 3 1/2 dozen.)
Method:

Instructions for jar: Place brown sugar in a 1
liter jar and press down firmly, making sure
surface is even.

In medium
bowl, combine flour, baking powder, baking soda,
salt and lemon peel. Stir well to mix. Spoon
mixture over brown sugar, pressing down firmly
and smoothing out the top.

Pour raisins
on top of flour mixture and press down.

Add walnuts
on top of raisins, pressing down firmly. Place
lid on jar.

For baking:
Preheat oven to 375 (190C). In large
bowl, combine contents of jar with butter or
margarine. egg and buttermilk.

Beat on low speed to
blend (cookie dough will be soft like a batter).
Drop by tablespoons onto lightly greased cookie
sheet.

Bake for 10 to 11 minutes or
until edges
are lightly browned. Remove from oven and let
cookies cool on cookie sheet for 1 minute. then
transfer to cooling rack.
