Cakes and Pastries Recipes - Walnut and Chocolate Cake Recipe

Ingredients

Serves 6:

  • 1 3/4 oz (50 g) walnuts

  • 3 1/2 oz (100 g) butter

  • 1 3/4 oz (50 g) chocolate

  • 5 eggs

  • 4 1/2 oz (130 g) sugar

  • 6 tbsp breadcrumbs

  • 1 vanilla pod

  • 1 pinch of salt


Method:

  1. Preheat the oven to 350F (180C). Chop the walnuts. Set aside.

  2. Melt 2 3/4 oz (80 g) of butter and the chocolate, cut into small pieces, over low heat.

  3. Separate the egg whites from the yolks. Beat the yolks with the sugar until the mixture whitens. Add the walnuts, setting aside a handful, the breadcrumbs. melted chocolate, and butter, and mix well. Add the vanilla seeds.

  4. Whisk the egg whites with a pinch of salt until they form stiff peaks, and fold them gently into the mixture.

  5. Grease a 9 inch (22 cm) pan and sprinkle the bottom with the remaining chopped walnuts. Pour the batter into the pan.

  6. Bake for about 30 min, monitoring the cooking time closely, the cake must remain moist in the center.
