Vanilla Custard
Marble Cake

Ingredients
Serves 8
Vanilla custard:
-
6 fl oz cream
-
2 cups milk
-
2 vanilla pods
-
7 egg yolks
-
4 oz sugar
Method:

Preheat the oven to 410°F/210°C.

Combine
11 oz
(290 g) of butter and the sugar in a mixing bowl.
Beat until the mixture becomes lightand fluffy. One by one add the
eggs. Fold in
12 1/3
oz
(350 g) of flour
and the baking
powder, sifted together. Divide the batter into two
equal parts.

Add the cocoa to one part and set it
aside.

Pour
the plain batter into a 10 inch (26
cm)
greased and floured cake pan. With a spatula carefully
add the cocoa batter on top. To obtain a marbled
pattern, merge this mixture carefully with
plain
batter using a knife, being careful not to mix them
too much.

Place the pan on a hot sheet. Bake for 30 min.

During
this time, prepare the vanilla custard: pour the
cream and the milk into a saucepan. Add the
vanilla
pods, split, and bring to a boil. In a mixing bowl,
beat the yolks with the sugar until the mixture turns light and fluffy. Stir in
a small amount of the cream-milk mixture. Pour this
mixture
into the saucepan, heating it and stirring all the
time until the mixture thickens and sticks to spatula. Do not bring to a boil. Strain
and let it cool.

Slice the cake and serve with vanilla custard on the
side.
