Pastry cream:
Method:

Warm the milk and add the yeast. Combine 1 3/4
oz (50 g) of butter and the milk in a bowl.
Place the flour in a mixing bowl, making a well in
the center.

Place the butter-milk mixture, lemon
juice, egg, confectioners' sugar, and salt in the
well. Knead together until the dough resembles
brioche dough. Allow to rest at room temperature for
2 h.

Knead the dough again, roll it out, and
shape it to a thickness of 1/2 an inch.
Grease a baking sheet and place the dough on it.
Dust with crystallized sugar. Allow it to rise again
for another hour.

Preheat the oven to 340°F/170°C. Bake for 20 - 25 min.

Prepare the pastry cream: bring the milk to a
boil, adding the split and scraped vanilla pod. Beat
the sugar and egg yolks until the mixture turns
light and fluffy. Add the flour and slowly pour in
the milk. Pour this mixture into a saucepan and cook
over low heat, continuing to whisk until the mixture
thickens. Allow to cool and fold in the whipped
cream. Cool completely, stirring frequently to keep
a skin from forming. Chill.

Remove the cake from
the oven and cool on a cooling rack. Cut it into two
layers and garnish
one with pastry cream. Assemble the layers and
decorate with granular
sugar.
