Method:

Wash and peel the sweet potatoes. Cut them into pieces
and soak for 10 min in water and the juice of 1 lime.
Drain.

Cook the sweet potatoes in salted
water for 20 minutes.

Preheat the oven to 300°F/150°C.

Puree the
sweet potatoes in a blender. Combine the hot puree with
the eggs. Add the sugar and 8 1/8 oz of softened
butter. Stir vigorously. Flavor with the remaining lime
juice, cinnamon, vanilla, and rum. Beat for 3 minutes.

Grease a pan and pour in the batter. Bake for 20 minutes.
Check for doneness by sticking a knife blade into the
center of the cake; it should come out clean.
