Cakes and Pastries Recipes - Sweet Potato Cake Recipe

Ingredients

Serves 6:

  • 1 3/4lb (800 g) sweet potatoes

  • Juice of 2 limes

  • 1 pinch of salt

  • 3 eggs

  • 1/3 lb (150 g) sugar

  • 8 3/4 oz (250 g) soft butter

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • 4 tbsp old rum


Method:

  1. Wash and peel the sweet potatoes. Cut them into pieces and soak for 10 min in water and the juice of 1 lime. Drain.

  2. Cook the sweet potatoes in salted water for 20 minutes.

  3. Preheat the oven to 300°F/150°C.

  4. Puree the sweet potatoes in a blender. Combine the hot puree with the eggs. Add the sugar and 8 1/8 oz of softened butter. Stir vigorously. Flavor with the remaining lime juice, cinnamon, vanilla, and rum. Beat for 3 minutes.

  5. Grease a pan and pour in the batter. Bake for 20 minutes. Check for doneness by sticking a knife blade into the center of the cake; it should come out clean.
