Cakes and Pastries Recipes - Sponge Cake Recipe

Ingredients

Serves 6:

  • 1 1/2 oz (40 g) butter

  • 4 eggs

  • 4 1/4 oz (120 g) sugar

  • 1 pinch of vanilla

  • 4 1/2 oz (130 g) flour


Method:

  1. Melt 1 oz (30 g) of butter and allow it to cool.

  2. Place the eggs, sugar, and vanilla in a mixing bowl. Place the bowl in a double boiler and whisk quickly, until the mixture turns light and foamy; it should quadruple in volume.

  3. Take the bowl out of double boiler and continue to whisk until the mixture forms ribbons.

  4. Add 4 1/4 oz(120 g) of flour, folding in gently with a spatula, and finally add the melted butter

  5. Preheat the oven to 350°F/180°C.

  6. Pour the batter into a greased and floured pan. Bake in the oven for 20 min. Check for doneness by sticking a knife blade into the center of the cake; it should come out clean.

  7. Turn out the sponge cake immediately after taking it out of the oven.
