Ingredients

4 1/2 oz (130
g) soft butter

4 1/2 oz (130
g) brown sugar

3/4 oz (20 g) almond paste

4 eggs
-
4 1/2 oz (130
g) type 55 flour
-
3/4 oz (20 g) almond powder
-
7 oz (200 g) golden raisins
-
6 1/3 oz (180 g) Malaga
raisins
-
1/3 lb (150 g) currants
-
4 1/2 oz (130 g) mixed
candied lemon and orange peel
-
2 1/2 oz (70 g)
candied cherries
-
3/4 oz (20 g) almond slivers

Zest of 1/2
orange
-
Zest of 1/2 lemon
-
3/4 oz (20 g) mix of
curry, cumin, cinnamon, and ginger powder

3 tbsp dark rum
Method:
-
Beat the butter with the brown sugar and the almond
paste.
-
Add the eggs. flour, and almond powder,
then the raisins, candied peel cut into small
pieces, the candied cherries cut into small pieces,
the almond slivers, the orange and lemon zest. and
the mix of spices and rum.

Preheat the oven to
350°F/180°C.
-
Line a cake pan with baking
paper. Pour the batter into the pan. Bake for 45
min. Test for doneness by sticking a knife blade
into the center of the cake; it should come out
clean.
