Spice Cake with
Orange Marmalade and Sugar Icing
Recipe
Ingredients
Serves 4:

1 1/4 cup milk
-
11 1/4 oz honey
-
1/2 tsp ground ginger
-
2 pinches ground
cinnamon
-
1 pinch ground aniseed
-
1 clove
-
1 pinch of ground
coriander
-
1 pinch of salt
-
4 1/2 oz flour
-
4 1/4 oz flour sifted finely
-
1/2 packet of baking
powder
-
7/8 oz almond
powder
-
1 egg
-
1/3 oz butter
-
1
3/4 oz confectioners' sugar
Orange marmalade:
-
2 oranges
-
1 3/4 oz brown
sugar
-
1 sheet of gelatin
Method:
-
Preheat the oven to 300°F/150°C.
-
In a
saucepan mix the milk, honey, spices, and salt.
Bring to a boil slowly. Remove from the heat and
allow to steep and cool, covered.

Mix the two
flours, setting aside 1 tablespoon of plain flour,
with the baking powder and ground almonds. Blend in
the egg and mix well. Mix in the spicy milk mixture,
bit by bit.

Grease and flour a 10 inch (25 cm)
pan. Arrange the batter in the pan. Bake for about
40 min.

Orange marmalade: peel the oranges,
setting aside the juice. Dissolve the sugar in 1
tablespoon of water. Cook quickly until you have a
caramel mixture. Add the gelatin, dissolved in the
warmed orange juice. Add the orange sections. Stir
and simmer over low heat for 3 min. Allow to cool.

Heat 3 tablespoons of water over low heat and add
the confectioners' sugar. Stir. Use a spoon to
spread the icing on the cake, allowing it to run
down the sides let it set. Spread the orange
marmalade on the center of the cake.
