Cakes and Pastries Recipes - Spice Cake with Orange Marmalade and Sugar Icing Recipe

Ingredients

Serves 4:

  • 1 1/4 cup milk

  • 11 1/4 oz honey

  • 1/2 tsp ground ginger

  • 2 pinches ground cinnamon

  • 1 pinch ground aniseed

  • 1 clove

  • 1 pinch of ground coriander

  • 1 pinch of salt

  • 4 1/2 oz flour

  • 4 1/4 oz flour sifted finely

  • 1/2 packet of baking powder

  • 7/8 oz almond powder

  • 1 egg

  • 1/3 oz butter

  • 1 3/4 oz confectioners' sugar

Orange marmalade:

  • 2 oranges

  • 1 3/4 oz brown sugar

  • 1 sheet of gelatin


Method:

  1. Preheat the oven to 300°F/150°C.

  2. In a saucepan mix the milk, honey, spices, and salt. Bring to a boil slowly. Remove from the heat and allow to steep and cool, covered.

  3. Mix the two flours, setting aside 1 tablespoon of plain flour, with the baking powder and ground almonds. Blend in the egg and mix well. Mix in the spicy milk mixture, bit by bit.

  4. Grease and flour a 10 inch (25 cm) pan. Arrange the batter in the pan. Bake for about 40 min.

  5. Orange marmalade: peel the oranges, setting aside the juice. Dissolve the sugar in 1 table­spoon of water. Cook quickly until you have a caramel mixture. Add the gelatin, dissolved in the warmed orange juice. Add the orange sections. Stir and simmer over low heat for 3 min. Allow to cool.

  6. Heat 3 tablespoons of water over low heat and add the confectioners' sugar. Stir. Use a spoon to spread the icing on the cake, allowing it to run down the sides let it set. Spread the orange marmalade on the center of the cake.
