Cakes and Pastries Recipes - Russian Almond Sponge Cake Recipe

Ingredients

Serves 8:

  • 4 1/4 oz (120 g) almond powder

  • 4 1/2 oz (130 g) confectioners' sugar

  • 2 1/2 oz (70 g) flour

  • 1/2 tsp vanilla powder

  • 8 egg whites

  • 3 1/2 oz (100 g) crystal sugar

  • 2 3/40z (80 g) almond slivers


Method:

  1. Preheat the oven to 430°F/220°C.

  2. Sift together the almond powder, 4 1/4 oz (120 g) of confectioners' sugar, the flour, and the vanilla. Set aside.

  3. Whisk the egg whites together with the crystal sugar until they form stiff peaks. Fold gently into the preceding mixture with a spatula.

  4. Spread this mixture on a sheet of baking paper. shaping as desired. Sprinkle with almond slivers and dust with the remaining confectioners' sugar. Bake for 12to 15 min.

  5. Place the sponge cake on a cooling rack and leave to cool.
