Sponge Cake Recipe
Ingredients
Serves 8:

4 1/4 oz (120 g) almond
powder
-
4 1/2 oz (130
g) confectioners' sugar
-
2 1/2 oz (70 g) flour
-
1/2 tsp vanilla powder
-
8 egg whites
-
3 1/2 oz (100 g) crystal
sugar
-
2 3/40z (80 g) almond slivers
Method:
-
Preheat the oven to 430°F/220°C.
-
Sift
together the almond powder, 4 1/4 oz (120 g)
of confectioners' sugar, the flour, and the vanilla.
Set aside.
-
Whisk the egg whites together with the
crystal sugar until they form stiff peaks. Fold
gently into the preceding mixture with a spatula.
-
Spread this mixture on a sheet of baking paper.
shaping as desired. Sprinkle with almond slivers and
dust with the remaining confectioners' sugar. Bake
for 12to 15 min.

Place the sponge cake on a
cooling rack and leave to cool.
