Pumpkin Cake

Ingredients
Serves 6:
Method:

Peel the pumpkin.
Remove the fibers and seeds. Cut the flesh into
cubes. Steam for 3 min. Drain and mash in a grinder.
Set aside.

In a saucepan, melt the sugar lumps
with 2 tbsp of water, cooking until it forms a light
colored
caramel.

Pour the caramel into a pan, swirling it around
until it coats the bottom and the sides.

Preheat the oven to 390°F/200°C.

Beat the
eggs and blend them with the pumpkin puree. Add the
sugar, vanilla sugar, flour, and salt. Blend
until smooth.

Pour the batter into a pan. Bake in
the oven in a double boiler for
45 minutes.
