Cakes and Pastries Recipes - Pumpkin Cake Recipe

Ingredients

Serves 6:

  • 4 1/2 lbs (2 kg) pumpkin

  • 15 sugar lumps

  • 4 eggs

  • 7 oz (200 g) sugar

  • 1 packet of vanilla sugar

  • 2 tbsp cornstarch

  • 1 pinch of salt


Method:

  1. Peel the pumpkin. Remove the fibers and seeds. Cut the flesh into cubes. Steam for 3 min. Drain and mash in a grinder. Set aside.

  2. In a saucepan, melt the sugar lumps with 2 tbsp of water, cooking until it forms a light colored caramel.

  3. Pour the caramel into a pan, swirling it around until it coats the bottom and the sides.

  4. Preheat the oven to 390°F/200°C.

  5. Beat the eggs and blend them with the pumpkin puree. Add the sugar, vanilla sugar, flour, and salt. Blend until smooth.

  6. Pour the batter into a pan. Bake in the oven in a double boiler for 45 minutes.
