Pistachio Brownies
with Pepper Flavored Cream and Chocolate Icing

Ingredients
Serves 6:

1 oz
chocolate
-
2 1/8 oz
butter
-
3 1/6 oz
sugar
-
1 egg
-
1 pinch of
salt
-
2 tbsp flour
-
3 1/2 oz
pistachios
-
1/3 tsp
baking powder
Pepper cream:
-
1 oz sugar
-
2 egg yolks
-
3 fl oz milk
-
3 tbsp cream
-
3 peppercorns
Dark chocolate icing:
-
1 cup milk
-
1/3 lb dark
chocolate
Method:
-
Preheat the oven
to 350F/175C.

Melt the chocolate
in double boiler.

Blend the butter
with the sugar, egg, salt and melted chocolate
until the mixture becomes fluffy. Fold in the
flour, pistachios, and baking powder. pour the
batter into a non-stick 2 inch deep pan. Bake
for 30 min.

Meanwhile, prepare
the pepper cream: in a bowl, whisk the sugar and
yolks until the mixture becomes light. Boil the
milk in a saucepan, combining it with the cream
and the crushed peppercorns, then pour it into
the preceding mixture. Stir, Strain the mixture
in the saucepan and cook until the cream
thickens and coats the spatula. Strain and set
aside.

Prepare the icing:
boil 1 cup of milk and pour it over the dark
chocolate, broken into pieces. Set aside.

Cover the brownie
completely with dark chocolate icing. Serve with
pepper cream.
