Cakes and Pastries Recipes - Pear Cake Recipe

Ingredients

Serves 8:

  • 6 1/3 oz (180 g) butter

  • 1 1/2 oz (210 g) flour

  • 1 tsp yeast

  • 9 1/2 oz (270 g) sugar

  • 4 eggs

  • 2 1/4lbs (1 kg) pears

  • 2 - 3 tbsp pear brandy

  • 2 cups (500 ml) thickened crème fraiche


Method:

  1. Molt 6 1/4 oz (170 g) of butter in a double boiler and cool.

  2. Preheat the oven to 350F/180C.

  3. In a  mixing bowl, silt together 7 oz (200 g) of flour, the yeast, and the sugar. Pour in the melted butter. Add the eggs. Mix well.

  4. Peel  the pears, remove the cores and the seeds, and cut them into large pieces. Add to the batter.  

  5. Grease and flour a porcelain cake pan. Pour the batter into the pan. Bake for 45 minutes.

  6. Serve the cake cool, sprinkled with pear brandy and accompanied by crème fraiche served bowl.
