Separate the egg
whites from the yolks. In a bowl whisk the yolks
with sugar and salt until the mixture becomes white.

Gently fold in 8 3/4 oz (250 g) flour, the baking
powder, and 4 1/4 oz (120 g) of melted butler. Mix
thoroughly until you have a smooth mixture.

Preheat the oven to 410F/210C.

Cut the orange peel into small pieces. Add the juice
this to the mixture.

Whisk the egg whites to
stiff peaks. Fold carefully into the mixture.

Grease and flour a 10 inch (24cm) cake pan.
Turn it over and shake out the excess flour.

Pour
the mixture into the pan. Bake for 45 min at 390F/200C.
