Cakes and Pastries Recipes - Orange Cake Recipe

Ingredients

Serves 4-6:

  • 3 eggs

  • 1/3 lb (150 g) sugar

  • 1 pinch of salt

  • 9 1/6 oz (260 g) flour

  • 1/2 packet of baking powder

  • 5 oz (140 g) butter

  • Candied peels of 2 oranges

  • Juice of 1 orange


Method:

  1. Separate the egg whites from the yolks. In a bowl whisk the yolks with sugar and salt until the mixture becomes white.

  2. Gently fold in 8 3/4 oz (250 g) flour, the baking powder, and 4 1/4 oz (120 g) of melted butler. Mix thoroughly until you have a smooth mixture.

  3. Preheat the oven to 410F/210C.

  4. Cut the orange peel into small pieces. Add the juice this to the mixture.

  5. Whisk the egg   whites to stiff peaks. Fold carefully into the mixture.

  6. Grease and flour a 10 inch (24cm) cake pan. Turn it over and shake out the excess flour.

  7. Pour the mixture into the pan. Bake for 45 min at 390F/200C.
