Cakes and Pastries Recipes - Hazelnut Cake Recipe

Ingredients

Serves 8:

  • 4 1/4 oz (120 g) shelled hazelnuts

  • 8 egg whites

  • 5 2/3 oz (160 g) sugar

  • 1 3/4 oz 150 g) sifted flour

  • 4 oz (110 g) butter


Method:

  1. Preheat the oven to 390F (200C).

  2. Chop the hazelnuts finely. Spread them on a baking sheet and place in a hot oven for a few minutes.

  3. During this time, whisk the egg whites with the sugar. Add the hazelnuts and 1 1/2 oz (40 g) of flour and 3 1/2 oz (100 g) of melted butter. Mix well.

  4. Pour the batter into a greased and floured pan. Bake for about 35 min.

  5. Turn out and allow to cool on a cooling rack.
