Hazelnut and
Armagnac Cake Recipe
Ingredients
Serves 6:
Method:

Chop the hazelnuts in
a grinder, being careful not to turn them to powder
(one should still feel the crunch in the batter).

Separate the egg whites from the yolks. In a bowl,
beat the yolks with the sugar until the mixture
whitens.

Add the hazelnuts, Armagnac, and 1 3/4
oz (50 g) of melted butter. Mix well. Stir in
the yeast and 7 oz (200 g) of flour, whisking all
the time.

Whisk the egg whites to stiff peaks with a
pinch of salt and fold in gently. Pour the batter
into a greased and floured pan.

Bake in a, oven
preheated to 390F/200C for 40 minutes. Turn out
and allow to cool on a rack.
