Cakes and Pastries Recipes - Hazelnut and Armagnac Cake Recipe

Ingredients

Serves 6:

  • 4 1/4 oz (120 g) shelled hazelnuts

  • 4 eggs

  • 1/3lb (150 g) sugar

  • 4 tbsp Armagnac

  • 2 1/8 oz (60 g) butter

  • 1 packet of baking powder

  • 7 1/2 oz (210 g) flour

  • 1 pinch of salt.


Method:

  1. Chop the hazelnuts in a grinder, being careful not to turn them to powder (one should still feel the crunch in the batter).

  2. Separate the egg whites from the yolks. In a bowl, beat the yolks with the sugar until the mixture whitens.

  3. Add the hazelnuts, Armagnac, and 1 3/4 oz (50 g) of melted butter. Mix well. Stir in the yeast and 7 oz (200 g) of flour, whisking all the time.

  4. Whisk the egg whites to stiff peaks with a pinch of salt and fold in gently. Pour the batter into a greased and floured pan.

  5. Bake in a, oven preheated to 390F/200C for 40 minutes. Turn out and allow to cool on a rack.
