Cakes and Pastries Recipes - Genoa Cake Recipe

Ingredients

Serves 8:

  • 2 1/8 oz (60 g) butter

  • 1/3lb (150 g) raw almond paste (otherwise use 2 2/3 oz 175 g) confectioners' sugar + 2 2/3 oz (75 g) almond powder)

  • 3 1/2 oz (100 g) confectioners' sugar

  • 1 egg + 4 yolks + 4 whites

  • 1 pinch of vanilla

  • 1 tablespoon orange blossom water

  • 3 1/6 oz (90 g) flour

  • 1 3/4 oz (50 g) crystal sugar

  • 1 3/4 oz (50 g) shaved almonds


Method:

  1. Melt 1 3/4 oz (50 g) of butter and allow it to cool.

  2. Blend together the almond paste and the confectioners' sugar until the mixture whitens, successively adding the egg and the yolks. Blend in the vanilla and the orange blossom water. Fold in the flour. Mix well.

  3. Whisk the egg whites, together with the crystal sugar, until they form stiff peaks, and fold gently into the mixture. Add the melted butter.

  4. Preheat the oven to 350°F/180°C.

  5. Grease a Genoa cake pan and sprinkle with the almond shavings.

  6. Pour the batter into the pan. Bake in the oven for 25 to 30 minutes.

  7. Turn out onto a dishcloth.
