Cakes and Pastries Recipes - Fennel Cake Recipe

Ingredients

Serves 6:

  • 2/3 lb (300 g) fennel

  • 3 eggs

  • 1/3 lb (150 g) sugar

  • 4 oz (110 g) soft butter

  • 3 1/2 oz 100 g flour


Method:

  1. Cut the fennel into pieces, throwing away any spoiled leaves, and steam for about 10 min.

  2. Separate the egg whites from the yolks. In a bowl whisk the yolks with half of the sugar until the mixture whitens. Add 3 1/2 oz of butter, blend to a paste, and finally fold in the flour.

  3. Blend with the fennel and add to the mixture.

  4. Preheat the oven to 410°F/210°C.

  5. Whisk the egg whites to stiff peaks, slowly blending in the remaining sugar. Fold into the batter.

  6. Pour the batter into a greased pan. Bake for 35 minutes.

  7. Allow to cool before serving.
