Cakes and Pastries Recipes - Dried Fruit Galette with Dark Chocolate Icing Recipe

Ingredients

Serves 6:

  • 1 cup (250 ml) of mixed dried fruit (figs, prunes, raisins, walnuts, hazelnuts, almonds ...)

  • 11 1/4 oz (320 g) flour

  • 1/2 tsp salt

  • 1 3/4 oz (50 g) sugar

  • 6 1/4 oz (170 g) butter

  • 1 egg

  • 1 tablespoon crème fraiche

Dark chocolate icing:

  • 3 1/2 oz (100 g) 70% chocolate

  • 15 g butter


Method:

  1. Preheat the oven to 230°C.

  2. Chop the figs, prunes, and raisins into small pieces. Chop the walnuts, hazelnuts, and almonds. Set aside.

  3. Place 2/3lb (300 g) of flour in a bowl; combine with the salt and the sugar. Make a small well in the center.

  4. Add 1/3lb (150 g) of butter, cut into pieces, and then crumble the mixture with your fingertips. Add the dried fruit. Work together with the egg and the crème fraiche. without kneading.

  5. Grease and flour a round 10 inch (25 cm) pan. Spread the batter in the pan with the backs of your hands to a 3/4 inch (2 cm) thickness. Bake for 30 minutes.

  6. Take the galette out of the oven and allow it to cool.

  7. Prepare the icing: melt the chocolate. broken into pieces, with 3 tablespoon of water and the butter in a double boiler. Mix well. Allow it to cool. Pour over the galette and serve immediately.
