Cakes and Pastries Recipes - Dried Fruit Chocolate Cake Recipe

Ingredients

Serves 6:

  • 9 1/6 oz (260 g) soft butter

  • 14 oz (400 g) confectioners' sugar

  • 2 egg yolks + 4 eggs

  • 3 1/3 fl oz (10 cl) milk

  • 2/3lb (300 g) flour

  • 2 3/4 oz (80 g) cocoa

  • 1 packet of baking powder

  • 16 oz (450 g) dried apricots

  • 8 3/4 oz (250 g) pistachios

  • 8 3/4 oz (250 g) white raisins

  • 8 3/4 oz (250 g) whole almonds

  • 2/3lb (300 g) hazelnuts


Method:

  1. Beat 8 3/4 oz (250 g) of butter and the sugar until creamy. Add the egg yolks, then the whole eggs, and finally the milk.

  2. Mix 10 oz (280 g) of flour, the cocoa, and the yeast and fold into the mixture. Add the dried fruits setting aside a handful for decoration and mix well.

  3. Pour the batter into a greased and floured cake pan, or better yet line it with baking paper.

  4. Bake in a preheated oven at 410°F/210°C for 45 min. Turn out and leave to cool. Decorate with the remaining dried fruit.
