and Spices Ganache Moist Cake

5 eggs

4 1/3 oz (125 g) sugar

1 tablespoon cocoa
-
4 1/4 oz flour
-
3/4
oz (20 g) butter
Ganache:
-
1 1/8 lb grated
dark chocolate
-
2 cups cream
-
1/2 tsp ground cinnamon
-
1 pinch
of
ground clove
-
1 pinch
of ground star anise
-
1 tsp liquid coffee
extract
-
Grated zest of 1/2 orange
-
Juice of 1 orange
Method:

Preheat the oven to 350°F (180°C).

Beat the
eggs and the sugar in a double
boiler
until the mixture thickens. Mix the cocoa and the
flour and add to the egg-sugar mixture in three
parts, folding in carefully. Pour this sponge cake
batter onto a greased baking sheet, no more than
1/2 inch (1 cm) thick. Bake for about 10 min.

Prepare the ganache: grate the chocolate. Heat the
cream in a saucepan. Melt the chocolate in the
cream. Add the spices, coffee extract, orange zest,
and juice.

Allow the sponge cake to cool and turn
in out onto a cooling rack.

Grease
a 10
inch (24 cm) pan. line the base and the sides with
the sponge cake. Fill with the ganache. Allow to set
and chill for 12 h.
