Cakes and Pastries Recipes - Chocolate and Almond Flake Cake, Chocolate Icing Recipe

Ingredients

Serves 4-6:

  • 4 1/4 oz (120 g) flour

  • 3 1/2 oz (100 g) sugar

  • 1 3/4 oz (50 g) almond powder

  • 1 packet vanilla sugar

  • 1/2 packet of baking powder

  • 2 eggs

  • 2 3/4 oz (80 g) dark chocolate

  • 3 1/6 oz (90 g) butter

  • 2/3 cup (160 ml) milk

  • 3 1/2 oz (100 g) flaked almonds 

Icing:

  • 1 3/4 oz (50 g) dark 70% chocolate


Method:

  1. Preheat the oven to 375F/190C.

  2. Mix the flour with the sugar. almond powder. vanilla sugar. and baking powder. Beat and add the eggs. Set aside.

  3. Melt the dark chocolate. broken into pieces. with 2 1/2 oz (70 g) of butter and the milk in a double boiler. Add this mixture to the preceding mixture.

  4. Grease a 10 inch (25 cm) cake pan and line with baking paper.

  5. Pour the batter into the pan and bake for 40 min.

  6. Turn the cake out immediately after removing it from the oven and allow it to cool on a cooling rack.  

  7. Prepare the icing: melt the chocolate, broken into pieces. in a double boiler. Coat the cake with a spatula. Sprinkle the surface and the edges with almond flakes.
