Method:

Combine the
flour,
1 3/4 oz (50 g) of sugar, and the salt with the
yeast, which has been dissolved in a little
lukewarm water in a mixing bowl. Add the eggs. Knead
the dough until it no longer sticks to your fingers.

Work in the butter. Knead for another 10 min.
Shape into a ball and allow to rest at room
temperature for 1 h. Cover with cling wrap and
store in a cool place.

Preheat the oven to 410F
(210C). 4. Cut the plums in two and remove the
pits, Set aside.

Cover a pie pan with the dough,
and even it out using your fingers to obtain a
uniform thickness.

Fill with damson plum halves.
Dust with the remaining sugar and cinnamon. Bake for
30 to 35 min.
