Cakes and Pastries Recipes - Brioche Cake with Damson Plums Recipe

Ingredients

Serves 4:

  • 1 1/8 lb (500 g) flour

  • 2 3/4 oz (80 g) sugar

  • 2 tsp salt

  • 3/4 oz (20 g) yeast

  • 5 eggs

  • 7 oz (200 g) soft butter

  • 2 1/41bs (1 kg) damson plums

  • 1 pinch cinnamon


Method:

  1. Combine the flour, 1 3/4 oz (50 g) of sugar, and the salt with the yeast, which has been dissolved in a little lukewarm water in a mixing bowl. Add the eggs. Knead the dough until it no longer sticks to your fingers.

  2. Work in the butter. Knead for another 10 min. Shape into a ball and allow to rest at room tem­perature for 1 h. Cover with cling wrap and store in a cool place.

  3. Preheat the oven to 410F (210C). 4. Cut the plums in two and remove the pits, Set aside.

  4. Cover a pie pan with the dough, and even it out using your fingers to obtain a uniform thickness.

  5. Fill with damson plum halves. Dust with the remaining sugar and cinnamon. Bake for 30 to 35 min.
