Cakes and Pastries Recipes - Breton Cake Recipe

Ingredients

Serves 6:

  • 7 oz/200g sugar

  • 5 egg yolks

  • 1 pinch of salt

  • 8 3/4 oz/250g soft salted butter

  • 2 tbsp rum

  • 2/3 lb/300g wheat flour

  • 1 tbsp milk


Method:

  1. Place the sugar in a bowl. Add 4 egg yolks and the salt. Whisk the mixture vigorously, until it ribbons; the mixture should be smooth and form ribbons when it falls off the whisk.

  2. Beat the butter quickly to obtain a creamy mixture. Add to the batter. Slowly blend in the rum and finally the sifted flour, stirring all the time.

  3. Preheat the oven toe 350F/180C.

  4. Pour the batter into a pan. Smooth the top with a spatula. Blend the remaining egg yolk with the milk and brush the cake surface.

  5. Criss-cross the surface wit a fork. bake in the oven for about 45 minutes.

  6. Turn out and allow to cool completely on a cooling rack before serving.
