Place the sugar in
a bowl. Add 4 egg yolks and the salt. Whisk the
mixture vigorously, until it ribbons; the
mixture should be smooth and form ribbons when
it falls off the whisk.

Beat the butter
quickly to obtain a creamy mixture. Add to the
batter. Slowly blend in the rum and finally the
sifted flour, stirring all the time.

Preheat the oven
toe 350F/180C.

Pour the batter
into a pan. Smooth the top with a spatula. Blend
the remaining egg yolk with the milk and brush
the cake surface.

Criss-cross the
surface wit a fork. bake in the oven for about
45 minutes.

Turn out and allow
to cool completely on a cooling rack before
serving.
