Cakes and Pastries Recipes - Basque Black Cherry Cake Recipe

Ingredients

Serves 6:

  • 11 oz (290 g) flour

  • 1 egg + 3 yolks

  • 7 1/2 oz (210 g) butter

  • 7 oz (200 g) sugar

  • 1 oz (30 g) almond powder

  • 1 pinch of salt

  • 1 pot of black cherry jam

  • 1/3 tsp dry yeast


Method:

  1. Place 10 oz (280 g) of flour in a bowl and make a well in the center. Inside the well place the egg, 2 yolks, 7 oz (200 g) of butter, the sugar, the almond powder, and the salt.

  2. Gently work into a firm dough. Shape into an oblong, cover with a dishcloth, and leave to rest for about 2 h at room temperature.

  3. Preheat the oven to 410°F (210°C).

  4. Roll out 2/3 of the dough. Cover a greased and floured pan with the dough, making a large border around the sides. Fill with jam.

  5. Roll out the remaining dough and place on top of the first disc. Join the 2 borders pinching the dough with your fingers after dipping them in water.

  6. Brush the top with beaten egg yolk. Bake for 40 min.
