Cakes and Pastries Recipes - Chocolate and Coffee Cake Recipe

Ingredients

Serves 8:

  • 4 eggs

  • 1/3 lb (150 g) sugar

  • 7 oz (200 g) dark chocolate

  • 1 tbsp strong coffee

  • 2 tbsp flour

  • 3 1/2 oz (100 g) almond powder

  • 6 1/4 oz (170 g) soft butter

  • 1 flinch of salt.


Method:

  1. Separate the egg whites from the yolks. Beat the yolks with the sugar until the mixture whitens.

  2. Melt the chocolate in a double boiler together with the coffee and add to the yolk and sugar mixture. Add the flour, ground almonds, and 1/3lb (150 g) of butter, cut into pieces, whisking all the time.

  3. Whisk the egg whites with a pinch of salt to stiff peaks and fold gently into the batter.

  4. Pour the batter into a greased cake pan that has hoon thoroughly floured to keep the cake from sticking to the pan.

  5. Bake in a preheated oven at 430°F/220°C for 20 min. Allow to cool completely before turning out.
