Ingredients
Serves 8:
-
4 eggs
-
1/3 lb (150 g) sugar
-
7 oz (200 g) dark
chocolate
-
1 tbsp strong coffee
-
2 tbsp flour
-
3 1/2 oz (100 g) almond powder
-
6 1/4 oz
(170 g) soft butter
-
1 flinch of salt.
Method:
-
Separate the egg whites from the yolks. Beat the
yolks with the sugar until the mixture whitens.

Melt
the chocolate in a double boiler together with the
coffee and add to the
yolk
and sugar mixture. Add the flour, ground almonds,
and 1/3lb (150 g) of butter, cut into
pieces, whisking all the time.

Whisk the egg whites
with a pinch of salt to stiff peaks and fold gently into the batter.

Pour the
batter into a greased cake pan that has hoon
thoroughly floured to keep the cake from sticking to
the pan.

Bake in a preheated oven at 430°F/220°C for 20 min. Allow to cool completely before
turning out.
