Cakes and Pastries Recipes - Chocolate Cake

Ingredients

Serves 8-10:

  • 4 1/3 oz (125 g) dark chocolate

  • 8 3/4 oz (250 g) sugar

  • 4 eggs

  • 6 1/4 oz (170 g) flour

  • 6 fl oz (180 ml) crème fraiche

  • 3/4 oz (20 g) butter

  • 1 tsp confectioners' sugar


Method:

  1. Preheat the oven to 400°F.

  2. Grate the chocolate with a coarse grater. Set aside.

  3. Beat the sugar and the eggs with a wooden spoon for 10 min (or use an electric mixer for 5 min).

  4. Add the grated chocolate and 1/3lb (150 g) of flour to this mixture. Add the crème fraiche. Mix thoroughly.

  5. Pour the mixture into a greased and floured pan. Bake for about 40 min (the center of the cake  should remain moist)

  6. Turn out the cake on a rack and leave it to cool.

  7. Dust with confectioners' sugar and serve.
