and Cocoa Recipe
Ingredients

4 1/3 oz (125 g)
chocolate

4 eggs
-
3 1/2 oz (100
g) sugar
-
1 tbsp cornstarch
-
2 1/2 tbsp cocoa
-
3 1/2 oz (100 g) soft
butter
-
1 pinch of salt
-
1 tbsp flour
-
1 3/4 oz (50 g)
shaved almonds
Method:

Melt the chocolate in a
double boiler.

Separate the egg whites from the
yolks. In a bowl, blend the yolks with the sugar.
Add the cornstarch,
2 tablespoons
of
cocoa, the
melted chocolate, and 2 3/4 oz (80 g) of
butter.

Whisk the egg whites with the salt. Fold into the
preceding mixture.

Preheat the oven to 340F/170C. Lightly grease and flour a pan.

Pour
the batter into a pan. Bake in a double boiler for
50 min to 1 hour.

Turn out the cake on a dish.

Toast the almonds in a non-stick pan. Sprinkle
them over the cake and dust with the remaining
cocoa.
