Cakes and Pastries Recipes - Chocolate Cake with Almonds and Cocoa Recipe

Ingredients

Serves 6:

  • 4 1/3 oz (125 g) chocolate

  • 4 eggs

  • 3 1/2 oz (100 g) sugar

  • 1 tbsp cornstarch

  • 2 1/2 tbsp cocoa

  • 3 1/2 oz (100 g) soft butter

  • 1 pinch of salt

  • 1 tbsp flour

  • 1 3/4 oz (50 g) shaved almonds


Method:

  1. Melt the chocolate in a double boiler.

  2. Separate the egg whites from the yolks. In a bowl, blend the yolks with the sugar. Add the cornstarch, 2 tablespoons of cocoa, the melted chocolate, and 2 3/4 oz (80 g) of butter.

  3. Whisk the egg whites with the salt. Fold into the preceding mixture.

  4. Preheat the oven to 340F/170C. Lightly grease and flour a pan.

  5. Pour the batter into a pan. Bake in a double boiler for 50 min to 1 hour.

  6. Turn out the cake on a dish.

  7. Toast the almonds in a non-stick pan. Sprinkle them over the cake and dust with the remaining cocoa.
