Cakes and Pastries Recipes - Chocolate and Almond Cake Recipe

Ingredients

Serves 8:

  • 9 1/6 oz (260 g) soft butter

  • 5 eggs

  • 8 3/4 oz (250 g) dark chocolate

  • 8 3/4 oz (250 g) crystal sugar

  • 4 1/3 oz (125 g) ground almonds

  • 1 tbsp potato starch

  • 1 tbsp flour


Method:

  1. Preheat the oven to 350°F/180°C. Blend the butter to a creamy texture. Separate the egg whites from the yolks. Set aside.

  2. Melt the chocolate in a double boiler. Beat in 8 3/4 oz (250 g) butter and one by one all the yolks. beating all the time.

  3. Add the sugar, almond powder, and potato starch. Beat the egg whites to stiff peaks and gently fold into the mixture.

  4. Pour the batter into a greased and floured pan. Bake for 30 minutes.
