Cranberry Nut Bread Recipe

cups all-purpose flour

1 cup sugar

1 tablespoon baking powder

2 teaspoons finely shredded orange
peel

1/2 teaspoon salt

1/4 teaspoon baking soda

1 beaten egg
-
1 2/3 cups milk
-
1/4 cup cooking oil
-
1 cup coarsely chopped cranberries
-
3/4 cup chopped almonds, pecans, or walnuts
Method:

Grease the bottom and
1/2 inch up the sides
of a 9x5x3-inch loaf pan; set aside.

In a large bowl
combine the flour, sugar, baking powder, orange peel,
salt, and baking soda. Make a well in center of flour
mixture; set aside.

In a medium bowl combine the egg, milk,
and oil. Add egg mixture all at once to flour mixture.
Stir just until moistened (batter should be lumpy).

Fold
in cranberries and chopped nuts. Spoon batter into
prepared pan.

Bake in a 350°C oven for 1 to 1
1/4
hours or until a toothpick inserted near center comes
out clean. Cool in pan on a wire rack 10 minutes.

Remove
from pan. Cool completely. Wrap in plastic wrap; store
overnight before slicing.
