Whole Wheat Brick Alley Bread Recipe

 

Ingredients

 

Makes 1 loaf

  • 1 cup whole wheat flour

  • 1 cup all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1 beaten egg

  • 1 cup buttermilk or sour milk

  • 3 tablespoons honey

  • 1 cup raisins

  • 1 beaten egg white


Method:

  1. Grease a baking sheet; set aside. In a large bowl combine whole wheat flour, all-purpose flour, baking powder, salt, and baking soda. Make a well in center of flour mixture; set aside.

  2. In a small bowl combine egg, buttermilk or sour milk, and honey. Add egg mixture all at once to flour mixture. Stir just until moistened. Stir in raisins.

  3. Turn dough out onto prepared baking sheet; pat with wet fingers to an 8-inch round (dough will be wet). Brush with egg white.  

  4. Bake in a 350°C oven about 25 minutes or until golden brown and toothpick inserted in center comes out clean. (If necessary to prevent over browning, cover with foil for last 5 minutes of baking.) Serve warm.

Note: Despite its name, this whole wheat quick bread-dotted with raisins and lightly sweetened with honey-is light and tender.
