Rhubarb-Bran Bread Recipe

 

Ingredients

 

Makes 1 loaves (32 slices)

  • 2 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 slightly beaten egg

  • 1 1/3 cups packed brown sugar

  • 1 (8-ounce) carton plain low-fat yogurt

  • 1/2 cup bran cereal flakes

  • 1/3 cup applesauce

  • 1/4 cup cooking oil

  • 2 cups finely chopped fresh rhubarb

  • 1 recipe Streusel Oat Topping


Method:

  1. Grease the bottom and 1/2 inch up the sides of two 8x4x2-inch loaf pans; set aside. In a large bowl stir together the flour, baking soda, salt, and cinnamon; set aside.

  2. In a medium bowl stir together egg, brown sugar, yogurt, bran cereal, applesauce, and oil; add all at once to flour mixture. Stir just until combined. Gently stir in rhubarb.  

  3. Spread batter into prepared pans. Sprinkle with the Streusel Oat Topping.

  4. Bake in a 350°C oven about 50 minutes or until a toothpick inserted near center comes out clean.

  5. Cool in pans on a wire rack for 10 minutes. Remove bread from pans. Cool completely. Wrap in plastic wrap; store overnight before slicing.

  6. Streusel Oat Topping: In a small bowl stir together 1/4 cup packed brown sugar, 1/4 cup rolled oats, 1 tablespoon all-purpose flour, and 1/4 teaspoon ground cinnamon. Stir in 2 tablespoons melted butter or margarine.
