Rhubarb-Bran Bread Recipe

2 3/4 cups
all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1 slightly beaten egg
-
1 1/3 cups packed brown sugar

1 (8-ounce) carton plain low-fat yogurt
-
1/2 cup bran cereal flakes
-
1/3 cup applesauce
-
1/4 cup cooking oil
-
2 cups finely chopped fresh rhubarb

1 recipe Streusel Oat Topping
Method:

Grease the bottom and
1/2 inch up the sides of
two 8x4x2-inch loaf pans; set aside. In a large bowl
stir together the flour, baking soda, salt, and
cinnamon; set aside.

In a medium bowl stir together
egg, brown sugar, yogurt, bran cereal, applesauce,
and oil; add all at once to flour mixture. Stir just
until combined. Gently stir in rhubarb.

Spread batter into prepared pans. Sprinkle
with the Streusel Oat Topping.

Bake in a 350°C oven
about 50 minutes or until a toothpick inserted near
center comes out clean.

Cool in pans on a wire rack
for 10 minutes. Remove bread from pans. Cool
completely. Wrap in plastic wrap; store overnight
before slicing.

Streusel Oat Topping: In a small bowl stir together
1/4 cup packed brown sugar, 1/4 cup
rolled oats, 1 tablespoon all-purpose flour, and 1/4 teaspoon ground cinnamon. Stir in 2
tablespoons melted butter or margarine.
