Peanut Butter Banana Bread Recipe

2 1/2 cups all-purpose
flour

1/2 cup granulated
sugar

1/2 cup packed brown
sugar

1 tablespoon
baking powder
-
3/4 teaspoon salt
-
1/4 teaspoon
ground cinnamon

1 cup mashed ripe
banana (about 3 bananas)

1 cup milk
-
3/4 cup chunky peanut
butter
-
3 tablespoons
cooking oil
-
1 teaspoon vanilla
-
1 slightly beaten
egg
-
1 cup milk chocolate pieces
-
1 recipe Peanut
Butter Frosting

Crushed
peanuts (optional)
Method:
-
Grease two 8x4x2-inch loaf pans; set aside. In a
large bowl stir together flour, sugars, baking
powder, salt, and cinnamon. Make a well in the
center of flour mixture; set aside.

In another large bowl combine mashed banana, milk,
peanut butter, oil, vanilla, and egg. Add banana
mixture to flour mixture; stir just until moistened.
Stir in chocolate pieces. Spoon batter evenly into
prepared pans.

Bake in a 350°C oven for 50 to 55 minutes or until
toothpick inserted near center of each loaf comes
out clean. Cool in pans on wire racks 10 minutes.
Remove from pans. Cool completely.

Wrap in plastic
wrap; store overnight before slicing. To serve,
frost with Peanut Butter Frosting. If desired, top
with peanuts.
Peanut Butter Frosting:

In a small saucepan heat and
stir 3 tablespoons chunky peanut butter and 2
tablespoons butter until melted.

Remove from heat;
stir in 1 cup sifted powdered sugar and 1 teaspoon
vanilla. Stir in 1 tablespoon milk. If necessary,
stir in enough additional milk, 1/2 teaspoon
at a time, to make spreading consistency.
