Lemon Tea Bread Recipe

1 loaves (16 slices)

1 2/3 cups all-purpose flour

3/4 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1/4 teaspoon ground nutmeg

1 beaten egg
-
3/4 cup milk
-
1/4 cup cooking oil
-
1
teaspoon finely shredded lemon peel
-
1 tablespoon lemon juice
-
2 teaspoons poppy seed

1 recipe Lemon Drizzle
Method:

Grease bottom and
1/2 inch up the sides of
one 8x4x2-inch loaf pan. In a medium bowl combine
flour, granulated sugar, baking powder, salt, baking
soda, and nutmeg. Make a well in center of flour
mixture; set aside.

In another medium bowl combine egg,
milk, oil, lemon peel, lemon juice,
and poppy: seed. Add the egg mixture all at once to
flour mixture. Stir just until moistened (batter
should be lumpy).

Spoon batter into prepared pan.
Bake in a 350°C oven for 45 to 50 minutes or until
toothpick inserted near the center comes out clean.
Cool in pan on wire rack for 10 minutes.

Remove
from pan. Cool completely. Wrap in plastic wrap;
store overnight before slicing. To serve, spoon
Lemon Drizzle over.

Lemon Drizzle: In a small
bowl stir together 1/2 cup sifted powdered
sugar, 1/2
teaspoon
finely shredded lemon peel,
and
enough lemon juice (2 to 3 teaspoons) to make drizzling consistency.
