Irish Soda Bread Recipe

 

Ingredients

 

Makes 1 loaf

  • 1 cup whole wheat flour

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3 tablespoons butter

  • 2 beaten eggs

  • 3/4 cup buttermilk or sour milk

  • 2 tablespoons brown sugar

  • 1/3 cup dried tart cherries or raisins


Method:

  1. Grease a baking sheet; set aside. In a medium bowl combine whole wheat flour, all purpose flour, baking powder, baking soda, and salt.

  2. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in center of flour mixture; set aside.

  3. In a small bowl stir together 1 of the eggs, the buttermilk or sour milk, brown sugar, and cherries. Add egg mixture all at once to flour mixture. Stir just until moistened. 

  4. urn dough out onto a lightly floured surface. Quickly knead dough by folding and gently pressing dough for 10 to 12 strokes or until dough is nearly smooth.

  5. Shape into a 6-inch round loaf. Cut a 4-inch cross, 1/2 inch deep, on the top. Place on prepared baking sheet. Brush with remaining egg.

  6. Bake in a 375°C oven about 35 minutes or until golden brown. Serve warm.
