Irish Soda Bread Recipe
Ingredients
Makes
1 loaf

cup whole wheat flour

1 cup all-purpose flour

1
teaspoon baking powder

1/2 teaspoon baking soda

1/4
teaspoon salt

3 tablespoons butter
-
2 beaten eggs
-
3/4 cup buttermilk or sour milk
-
2
tablespoons brown sugar
-
1/3
cup dried tart cherries or raisins
Method:

Grease a baking sheet; set aside. In a
medium bowl combine whole wheat flour, all purpose
flour, baking powder, baking soda, and salt.

Using a
pastry blender, cut in butter until mixture
resembles coarse crumbs. Make a well in center of
flour mixture; set aside.

In a small bowl stir together 1 of the eggs, the
buttermilk or sour milk, brown sugar, and cherries.
Add egg mixture all at once to flour mixture. Stir
just until moistened.

urn dough out onto a lightly floured surface.
Quickly knead dough by folding and gently pressing
dough for 10 to 12 strokes or until dough is nearly
smooth.

Shape into a 6-inch round loaf. Cut a 4-inch
cross, 1/2 inch deep, on the top. Place on
prepared baking sheet. Brush with remaining egg.

Bake in a 375°C oven about 35 minutes or until golden
brown. Serve warm.
