Boston Brown Bread Recipe

cup cornmeal

1/2
cup whole wheat flour

cup rye flour

1/2
teaspoon baking powder

1/4 teaspoon
baking soda

teaspoon salt

1 cup buttermilk or sour milk

1/3
cup mild-flavored molasses
-

tablespoons brown sugar

tablespoon cooking oil

1/4
cup raisins or chopped walnuts
Method:

Grease the bottom and
1/2 inch up sides of a
7 1/2x3 1/2x2-inch loaf pan; set aside. In a large
bowl combine cornmeal, whole wheat flour,
rye flour baking powder, baking soda, and salt; set
aside.

In a medium bowl combine buttermilk or
sour milk, molasses, brown sugar, and oil. Gradually
add buttermilk mixture to flour mixture, stirring
just until combined.

Stir in raisins or walnuts.
Spoon into prepared pan.
Grease a piece of foil. Place the foil, greased
side down, over the pan. Press foil around
edges to seal.

Place the loaf pan on rack in a Dutch oven.
Pour hot water into Dutch oven around loaf
pan until water comes

inch up side of pan.

Bring water to boiling; reduce
heat. Cover; simmer for 2 to 2 1/2 hours or
until a toothpick inserted near center comes out
clean. (Add additional boiling water to Dutch oven
as needed.)

Remove loaf pan from Dutch oven; let
stand on wire rack for 10
minutes.
Remove
from pan. Serve warm.
