Blueberry-Orange Loaf Recipe

1 cup fresh or frozen blueberries, thawed

1/2 cup chopped pecans

1 tablespoon all purpose
flour

1 teaspoon finely shredded orange peel

3 cups all
purpose flour
-
1 cup sugar
-
1 tablespoon baking powder
-
1/2 teaspoon baking soda
-
1/2 teaspoon
salt

1 beaten egg
-
1 1/3 cups
milk
-
1/4 cup
orange juice
-
1/4 cup
cooking oil
-
1 teaspoon
vanilla
Method:

Grease the bottom and
1/2 inch up sides of
one 9x5x3-inch loaf pan; set aside.

In a small bowl combine blueberries, pecans, the 1
tablespoon flour, and orange peel. Toss lightly to
mix; set aside.

In large bowl combine the 3 cups flour, the:
sugar, baking powder, soda, and salt. Make a well in
the center of flour mixture; set aside.

In a medium bowl combine the egg, milk, orange
juice, oil, and vanilla. Add egg mixture: all at
once to flour mixture. Stir just until moistened
(batter should be lumpy). Fold in blueberry mixture.

Spoon batter
into prepared pan. Bake in a 350°C oven about 1
hour or until a toothpick inserted near center
comes out clean. (If necessary to prevent over
browning, cover with foil for the last 10 to 15
minutes of baking).

Cool in pan
on wire rack 10 minutes. Remove from pan. Cool
Completely. Wrap in plastic wrap; store
overnight before slicing.
