Apple Bread Recipe

cups all-purpose
flour

tsp baking soda

tsp ground cinnamon

3 beaten eggs

3 cups shredded,
peeled cooking apples (4
medium), such as Golden Delicious, Rome, Granny Smith, Jonathan, or
Newtown Pippin

cups Sugar

2/3 cup cooking oil

1 tsp vanilla
Method:

Grease and flour three
7 1/2x3 1/2x2-inch or
two 8x4x2-inch loaf pans; set a side.

Combine flour, soda, salt, cinnamon, and baking
powder; set aside. Combine eggs, apple, sugar, oil,
and vanilla. Stir in flour mixture just until
moistened.

Pour into prepared pans. Bake in a
325°C oven
45
to 55 minutes or until toothpick comes out clean.
Cool 10 minutes.

Remove from pans. Cool. Wrap; store
overnight before slicing.
Note: Most quick breads are loaded with nuts, but not this
one. This way the
sweet, fruity flavor of apple comes through.
