Apple Bread Recipe

 

Ingredients

 

Serves 30

  • 3 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 tsp ground cinnamon

  • 1/4 tsp baking powder

  • 3 beaten eggs

  • 3 cups shredded, peeled cooking apples (4 medium), such as Golden Delicious, Rome, Granny Smith, Jonathan, or Newtown Pippin

  • 2 cups Sugar

  • 2/3 cup cooking oil

  • 1 tsp vanilla


Method:

  1. Grease and flour three 7 1/2x3 1/2x2-inch or two 8x4x2-inch loaf pans; set a side.

  2. Combine flour, soda, salt, cinnamon, and baking powder; set aside. Combine eggs, apple, sugar, oil, and vanilla. Stir in flour mixture just until moistened.

  3. Pour into prepared pans. Bake in a 325°C oven 45 to 55 minutes or until toothpick comes out clean. Cool 10 minutes.

  4. Remove from pans. Cool. Wrap; store overnight before slicing.

Note: Most quick breads are loaded with nuts, but not this one. This way the sweet, fruity flavor of apple comes through.
