Sweet Potato Biscuits Recipe

cups all-purpose flour

teaspoons baking powder

teaspoons snipped fresh thyme or
1/2 teaspoon dried thyme, crushed

1/2 teaspoon salt

1/4 cup shortening
-
1
cup mashed cooked sweet potatoes or
mashed canned sweet potatoes

1/2
cup milk

2 tablespoons brown sugar
Method:

In a medium bowl
combine flour, baking powder,
thyme, baking soda, and salt.

Using a pastry
blender, cut in shortening until mixture resembles
coarse crumbs. Make a well in the center of the
flour mixture; set aside.

In another medium bowl combine sweet potatoes,
milk, and brown sugar. Add sweet
potato mixture all at once to the flour mixture. Using a fork, stir just until moistened.

Turn dough out onto a lightly floured surface.
Quickly knead dough by folding and
gently pressing dough for 10 to 12 strokes or
until dough is nearly smooth.

Pat or lightly roll
dough to 1/2-inch thickness. Cut dough
with a floured 2 1/2-inch round cutter, dipping cutter into flour between cuts.

Place biscuits 1 inch apart on an un-greased baking
sheet. Bake in a 425°C oven for 12 to 15 minutes or
until golden brown.

Remove biscuits from baking
sheet; serve warm.
