Puffets Recipe

 

Ingredients

 

Makes 12 puffets

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 tablespoon sugar

  • 1/4 teaspoon salt

  • 1 slightly beaten egg

  • 1 cup milk

  • 3 tablespoons butter, melted

  • 3/4 cup snipped dried tart cherries

  • 2 tablespoons sugar

  • 1/4 teaspoon ground cinnamon

  • 2 tablespoons butter, melted


Method:

  1. Grease twelve 2 1/2-inch muffin cups; set aside.

  2. In a large bowl stir together flour, baking powder, the 1 tablespoon sugar, and the salt. Make a well in the center of the flour mixture; set aside.

  3. In a small bowl combine the egg, milk, and the 3 tablespoons melted butter. Add to the flour mixture along with the cherries.

  4. Stir just until dry ingredients are moistened. Divide batter among prepared muffin cups.

  5. Bake in a 400°C oven about 20 minutes or until tops are golden brown.

  6. Remove from muffin cups. Stir together the 2 tablespoons sugar and the cinnamon.

  7. Brush tops of warm puffets with the 2 tablespoons melted butter. Dip tops in the sugar-cinnamon mixture. Serve warm.
