  • 2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon ground allspice

  • 1 beaten egg

  • 1 (8-ounce) carton dairy sour cream

  • 1/3 cup packed brown sugar

  • 1/3 cup milk

  • 1/4 cup cooking oil

  • 1 cup chopped peeled fresh, frozen, or canned peaches

  • 1 recipe Streusel Topping

Method:

  1. Grease sixteen 2 1/2-inch muffin cups; set aside. In a medium bowl combine flour, baking powder, salt, baking soda, and allspice. Make a well in the center of the flour mixture; set aside.

  3. Spoon batter into prepared muffin cups, filling each two-thirds full. Sprinkle batter with Streusel Topping.

  4. Bake in a 400°C oven for 20 to 25 minutes or until a toothpick inserted in centers comes out clean. Cool 5 minutes in muffin cups. Remove from muffin cups; serve warm.

Streusel Topping:

  1. In small bowl stir together 3 tablespoons all-purpose flour, 3 tablespoons brown sugar, and 1/4 teaspoon ground cinnamon.

  2. Using a pastry blender, cut in 4 teaspoons butter until mixture resembles coarse crumbs.
