Peach-Brown Sugar Muffins Recipe

cups all-purpose flour

teaspoons baking powder

teaspoon salt

1/4 teaspoon baking soda

1/4 teaspoon ground
allspice

beaten egg

(8-ounce) carton dairy sour cream

cup packed brown
sugar

1/3 cup milk

1/4 cup cooking oil

1 cup chopped peeled fresh, frozen, or
canned peaches

Method:

Grease sixteen 2 1/2-inch
muffin cups; set aside. In a medium bowl combine
flour, baking powder, salt, baking soda, and
allspice. Make a well in the center of the flour
mixture; set aside.

In another medium bowl combine
egg, sour cream, brown sugar, milk, and oil; stir in peaches. Add
peach mixture all at once to flour mixture.
Stir just until moistened (batter should be lumpy).

Spoon batter into prepared muffin cups, filling each
two-thirds full. Sprinkle batter with Streusel
Topping.

Bake in a 400°C oven for 20 to 25 minutes or
until a toothpick
inserted in centers comes out clean. Cool
5 minutes in muffin cups. Remove from muffin cups; serve warm.
Streusel Topping:

In small bowl stir together 3 tablespoons all-purpose flour, 3 tablespoons
brown sugar, and 1/4 teaspoon ground
cinnamon.

Using a pastry blender, cut in
4 teaspoons butter until mixture resembles coarse
crumbs.
