Raspberry Ribbon Coffee Ring Recipe

Ingredients

 

Makes 12 servings

  • 2/3 cup milk

  • 1/3 cup butter or margarine, cut up

  • 1 egg

  • 2 tablespoons water

  • 3 cups bread flour

  • 1/3 cup granulated sugar

  • 3/4 teaspoon salt

  • 1 1/4 teaspoons active dry yeast or bread machine yeast

  • 1/3 cup seedless red raspberry preserves or apple butter

  • 1/4 cup all-purpose flour or bread flour

  • 1/4 cup packed brown sugar

  • 1/2 teaspoon ground cinnamon

  • 3 tablespoons butter or margarine              

  • Milk


Method:

  1. Add first 8 ingredients to bread machine according to manufacturer's directions. Select the dough cycle. When cycle is complete, remove dough from machine. Punch down. Cover; let rest 10 minutes.

  2. Grease 10-inch tube pan. On lightly floured surface, roll dough into a 16x8-inch rectangle. Spread with the preserves or apple butter. Starting from a long side, roll up into a spiral. Bring ends together to form a ring. Moisten ends; pinch together to seal ring.

  3. Place in prepared pan. Cover and let rise in a warm place for 1 to 1 1/4 hours or until nearly double.

  4. Meanwhile, for topping, in a medium bowl stir together the all-purpose flour, brown sugar, and cinnamon. Cut in the 3 tablespoons butter until crumbly.

  5. Brush dough with milk; sprinkle with topping. Bake in 350°C oven about 50 minutes. If necessary to prevent over browning, cover loosely with foil last 10 minutes.

  6. Cool in pan 15 minutes; remove from pan. Transfer to wire rack. Serve warm or cool.
